Big Bowl of Love

Cristina Ferrare’s Big Bowl of Love – Bite Me : Tuna Tartare Cones, Tropical Summer Rolls, and Crispy Goat Cheese Bites

Big Bowl of Love brings out the tastiest of appetizers on today’s episode. Cristina Ferrae likes to consider these appespoilers because everyone eats so many that they ruin their appetite for dinner. However, CF’s daughter has a silly name for them..Bite Mes. Today, CF’s best friend of 25 years, Margaret, and Chef Golvind Armstrong join her at the counter to dish it up and have some fun.

What’s on today’s menu?

  • Tuna tartare cones
  • Tropical summer rolls
  • Crispy goat cheese bites

This show was full of a ton of tips and great ideas. It started off with a little back and forth between two good friends. I absolutely loved the presentation of the tuna tartare cones. Chef Govind was full of even more awesome information. He simplified the tropical summer rolls in a way that allows you to get creative. I can image lining my family up to pick their own makings….everyone will be happy! The crispy goat cheese bites looked amazing. I am not a huge goat cheese fan, but can’t wait to try this with another cheese. Let me know if you have found something great that works! Overall, this episode actually made me want to get up and start getting creative!

Now for a few BBOL tips:

  • Use a paper cone (not wax because it will melt in the oven) to create the won ton cone instead of deep frying them- much healthier!
  • Use Sushi grade tuna…make sure it came in that day.
  • Put the tuna in the freezer for 10 minutes to make it easier to slice into pieces.
  • Use shot glasses to place the cones it…perfect for presentation!
  • Be sure to roll the tropical summer wraps tight.
  • Add I tablespoon of water to 1 egg to create a good wash that isn’t too heavy.
  • Be sure goat cheese is at room temperature so it is easier to use and then chill the goat cheese in the refrigerator for 10-20 minutes to firm it up before cooking.
  • Double dip! Make sure to dip the cheese in the egg wash, into the flour/panko and then repeat. This helps it to hold its shape better when cooking.

Now for a few of my OWN suggestions:

  • Tuna tartare needs to chill for an hour so be sure to make it ahead of time.
  • Don’t over stuff your tropical summer roll or it won’t close well. Practice…you will get better at it!
  • Don’t forget to add the sauce….that is what makes the meal. Otherwise, the wrap is a little bland.

Be creative and have fun!
