 Big Bowl of Love’s Cristina Ferrare has the O-so entertaining Chef Art Smith joining her on this episode. They work so well together and make everything look so easy. While CF fills the kitchen with lots of love, Chef Art adds all the southern sweetness!

I am so excited about this episode. I know I always say that but I can’t wait to get creative with the turkey cheeseburger recipe. I imagine being able to make meatloaf, meatballs, use it in casseroles and even have them as actual burgers. My family has “pizza night” at least twice a month where we make our own dough and personal pizzas, so this episode was great. I was able to learn a few new tips. I can’t wait to share them with the fam!

Now for a few BBOL tips:

  • Add a little agave syrup to your dough. It gives it a little sweetness without raising your glucose.
  • Use parchment on your paddle when making it so your pizza slides right off. If you don’t have any, use cornmeal. It slides right off!
  • Remove the parchment paper quickly after a few minutes. It will catch fire at that high heat.
  • Heat your pizza stone in the oven. It is important that it is heated and ready when your pizza.
  • Use dark meat ground turkey. It gives you a better, tastier burger.
  • Wrap buns in aluminum foil and place in the oven to keep them warm.
  • Turkey is a bland meat so add flavor. Mayonnaise gives the burger a lot of moisture.
  • Makes a great meatloaf or meatballs.
  • Don’t put burgers too close together when cooking them or they will steam.
  • Put burger in hot skillet and DO NOT touch it for 4 minutes. Allows for a nice crust.
  • Have to cook turkey all the way through. After you create the nice crust on each side, steam wit a little water for an extra 4 minutes.
  • Add chopped red, green or yellow bell peppers to your hamburgers to add a little crunch, or even some smoked Gouda or blue cheese.
  • Marinate shrimp for about ½ hour. It will change color so don’t worry.
  • Be careful if you are adding any tequila to the hot pan, remove it from the heat for a moment so you don’t catch fire…it will flame!
  • Shrimp great over salad greens, rice or pasta.
  • Ask to have your shrimp peeled and deveined to save you time.

Here are a couple of my OWN suggestions:

  • Mix some extra pizza dough. Use it to make bread sticks for another meal.
  • Take a little cinnamon and sugar and sprinkle it
  • Make some meatballs and freeze them to save yourself some time in the future.
  • In advance, make a few mini pizzas and put them in the fridge. It makes for the perfect last minute snack for your kids and their friends.
  • Take the turkey burger recipe and turn it into mini meatloaves. Simply fill a large muffin tin and each person will have their own. Works great if you are watching portion size .
